Pizza Quesadillas

Ingredients
- 4 large flour tortillas
- 1 cup shredded mozzarella cheese

1/2 cup Rao's Homemade Pizza Sauce
- Optional toppings: sliced pepperoni, sliced olives, diced bell peppers, etc.

Rao’s Homemade Limited Reserve Extra-Virgin Olive Oil or cooking spray for cooking
Directions
Preheat a skillet or griddle over medium heat.
- Lay out two of the flour tortillas on a clean surface. Spread 2 tablespoons of Rao's Homemade Pizza Sauce evenly over each tortilla.
- Sprinkle 1/2 cup of shredded mozzarella cheese evenly over the sauce on each tortilla. If using any additional toppings, add them on top of the cheese.
- Place the other two tortillas on top of the cheese and toppings to create two quesadilla sandwiches.
- Lightly brush one side of each quesadilla with Rao’s Homemade Limited Reserve Extra-Virgin Olive Oil or spray with cooking spray.
- Place the quesadillas, oiled side down, onto the preheated skillet or griddle.
- Cook for 2-3 minutes on each side, or until the tortillas are golden brown and crispy, and the cheese is melted.
- Remove the quesadillas from the skillet and let them cool for a minute or two before slicing into wedges.
- Serve hot with additional Rao's Homemade Pizza Sauce for dipping, if desired.
