"Sometimes we won’t have a formal meal, but I love to put out a selection of cured meats, cheeses and other antipasti dishes. The Mediterranean Spiced Olives, Black Olive Spread, and Sundried Tomatoes are the perfect compliment to a spread.”

Ingredients
-
1/4 pound thinly sliced prosciutto
-
¼ pound thinly sliced Genoa salami
-
¼ pound thinly sliced soppressata
-
¼ pound thinly sliced pepperoni
-
¼ pound thinly sliced mortadella
-
1 cup Rao’s Homemade Mediterranean Olives
-
1 bunch of grapes
-
½ pound wedge Parmigiano Reggiano cheese
-
½ pound wedge Pecorino Romano cheese
-
1 loaf fresh-baked Italian bread
-
1 bottle of Rao’s Homemade Ligurian olive oil
Directions
On a large cutting board or platter, lay out all the meats. Roll them into tubes, or simply arrange them in a pleasing composition on the serving platter. Place the mixed olives in a small bowl on the platter, as well as the olive spread, and arrange the grape vines around the bowl.
Arrange the cheeses on the platter, accompanied by a cheese shaver or cheese knife. Wrap bread in aluminum foil and warm in a 300-degree oven for 10-15 minutes. Remove the bread and cut into thick slices. Transfer the slices to a napkin-lined breadbasket or add to platter.
