PROCEDURE

  • Bring a pot of salted water to a boil. Add your preferred Rao’s Pasta and cook until al dente according to package directions. Remove, rinse under cool water, drain well and set aside.
  • Prepare the tzatziki: Using a blender, combine yogurt, Rao’s Extra Virgin Olive Oil, garlic, lemon juice, oregano, salt & pepper – puree until smooth. Add the mint and scallions and blend briefly. Refrigerate until ready to prepare the salad.
  • Prepare the salad: In a large bowl, combine the cucumber, Rao’s Grilled Artichokes, Rao’s Grilled Green Olives, red onions with the pasta and tzatziki dressing; toss to mix. Add the feta cheese, tomatoes, parsley and gently turn to blend.
