Rao's Recipe for antipasto salad with meats, cheeses, and asparagus



  • Preheat oven to 400°F.
  • Coat asparagus with a light coating of Rao’s Extra Virgin Olive Oil and lay flat in a roasting pan. Roast at 400 degrees for approximately 10-15 min.
  • Place a layer of lettuce on a large platter overlapping the lettuce as you make your way around the platter.
  • In a small bowl combine fresh mozzarella & grape tomatoes. Toss with Rao’s Extra Virgin Olive Oil, add fresh basil.
  • Roll some of the meats and cut provolone into small cubes.
  • Arrange all ingredients nicely on top of the lettuce on the platter and serve.
